A few months back when it began to get warm in Canada, I started my very own herb garden. It was very basic, just some basil, rosemary and spearmint. Eventually I also planted some green onions, leeks, and chives.
Fast forward to today, the organic herbs are thriving under the hot summer sun. Here’s a photo of my freshly snipped green onions.
I use my green onions almost everyday day. From omelets to stir fried dishes, they’re the perfect garnish! On days when my green onion plants are extra generous though, I like making my green onion & garlic bread. The recipe is inspired by this Youtube video. I just did a few tweaks for my taste. This recipe yields one 8’’ circular loaf.
I used bottled garlic because since the Pandemic i haven’t seen fresh garlic bulbs. I did the same folding technique as the video. The only difference is I used a stand mixer instead of kneading it by hand. On the stand mixer with the dough hook attachment knead of low for 2-3 minutes and then on medium speed for 8-10 minutes.
Bake in a preheated 365F (185°C) oven for 12-15 minutes. Please check the bread at the 12 minute mark to gauge if it needs more time to bake. This varies depending on your oven. Have fun baking!
